Drying method
As stated above, the dry season will set in so so start thinking about dry onion, garlic and ginger powder.
Start freezing these foods now
Cut yam, sweet potatoes, and cassava into pieces and thoroughly wash them in a salt solution. Remove from the water and dry them with a clean kitchen towel, put them in a ziplock bag and put them in the freezer. For plantains, wash with the skin on and put them in the freezer. You can choose to cut into desirable sizes or freeze them in whole.
For smoothie lovers who want to spend so much buying fruits when they’re scarce, take advantage of the season now and cut fruits into pieces, put them in zip lock bags and use them for smoothies.
We all love cooking with fresh tomatoes. Buy tomato in bulk, blend and boil for recipes such as tomato sauce or all kinds of stews that call for tomatoes.
For vegetables, chop and parboil them and give them a cold bath before bagging and freezing them. Make sure to wipe excess water before putting them in the freezer. Alternatively, you can spread them on a plastic tray and put them in the freezer for about an hour or two before bagging them.
